Cut and paste should work.
Under “More options…” you can choose how to output predictions only.
I am not personally aware of a GUI option to save all the text results.

The copy and paste works, however, it is a slow process for multiple
simulations.

I just found more options under Lag creation (Forecast->Advanced
configuration)

Glad you found something. KnowledgeFlow would probably give you some options as well.

Right-click on a result list and select "Save result buffer" (Weka
Manual, 5.3.6 The Result List).

I think it is this one:
https://sourceforge.net/projects/antlatex.berlios/files/

Just place it in the following directory, to automatically give ant
access to it without modifying any build files:
$HOME/.ant/lib

You might need additional jar files.

However, release.xml is for making actual releases of Weka. This
includes tagging the subversion repository, which you won't be able
to.

You could use snapshot.xml instead.

For my ADAMS project, I've been generating RPM packages for a while
using Maven. Today, I pushed out commits that generate RPM packages
for the nightly snapshots now as well:
https://www.cs.waikato.ac.nz/~ml/weka/snapshots/weka_snapshots.html

This is achieved through the "ant-rpm-pkg" profile, which you can see here:
https://github.com/Waikato/weka-trunk/blob/36c830eb5c0713f94fbbe9d8200378d83b4be4a8/weka/pom.xml#L201

For generating an RPM, you can use the following commands (first ant
build, then Maven RPM packaging):
ant exejar srcjar; mvn -Pant-rpm-pkg package -DskipTests=true
